All of the fruit is grown at our Fox family vineyard on the Naramata Bench. The fruit was picked into baskets and then 100% whole-cluster pressed into tank and barrel. We then used a mix of wild and foreign yeasts to ferment the juice. This Semillon was aged on its fine lees in 16% new and 16% neutral French oak, with the remainder aged in stainless steel for 7 months. The Semillon is unfined and unfiltered, which gives the wine more texture and allows for greater overall mouthfeel. The wine is dry, with hints of honey, hay, lemon curd, lemon-lime citrus, green papaya, complemented by nice minerality and juicy acidity. Drink now or cellar this wine for a few years, as it will age beautifully. It pairs wonderfully with food, especially shellfish.
