100% Pinot Noir Saignee. The Saignèe soaked on its skins for an hour before we bled it off. Fermentation started in stainless steel with the use of organic yeasts and was complete in 10 days. After fermentation, we then gently racked it into 84% stainless steel and 16% neutral French oak where the wine aged on its fine lees for 6 months before bottling. The Saignèe is unfined and unfiltered which adds beautiful texture, flavour and purity to the wine. The wine is dry with great acidity and body and has notes of hibiscus, rose petal, raspberry, strawberry, and cherry.
